Chef plans hotel-restaurant venture

A Manchester-based chef has announced he is to open a new hotel-restaurant in Edinburgh.

Paul Kitching is renowned for his creative approach to cookery and has won praise from both his peers and the public.

Speaking to the Journal, he revealed that he is to leave his role at Juniper, the Altrincham eatery where he is has worked for the last 12 years, as he seeks to earn his second Michelin star.

He plans to establish Hotel Angela - named after his mother - inside a converted Georgian home in Edinburgh, opening a six-to-eight bedroom hotel and a 35-cover restaurant.

Explaining why he chose to move north, the former kitchen porter said: "Edinburgh takes my breath away; for me there is nothing like it."

Those interested in restaurant work at the new venue may want to bear in mind what Mr Kitching looks for in his staff, with the chef revealing his current kitchen crew is "young and fresh".

"We like our staff to be open-minded people and not set in their ways."
