Sustainability 'is a big concern in restaurant jobs'

People looking for restaurant jobs do not have enough time to consider sustainability issues, according to an expert, who said that eatery managers need assistance when trying to reduce their impact on the environment.

Giles Gibbons, founder of the Sustainable Restaurant Association, said that there is some understanding of the issues surrounding eco-friendly catering practices, but more needs to be done.

"I think it would be wrong to say there was a fantastic understanding of what the components are that add in to sustainability, there is more of an identification with particular issues," he said.

Mr Gibbons added that people in restaurant jobs need to have a good understanding of all the issues surrounding sustainable practices and said that is what his organisation is trying to help staff with.

The Restaurant Group recently saw its pre-tax profits rise by two per cent to a higher-than-expected £50 million.
